Our Early-Harvest Organic Extra Virgin Olive Oil is an olive oil characterised by its distinctive green colour and its intense fruitiness. The harvest takes place at the end of October and at the beginning of November, before the drupes reach full ripeness.It is at this time that olive oil offers the best organoleptic qualities and the greatest health benefits from a nutritional point of view. Early-Harvest Organic EVOOIt is an olive oil from certified organic production that does not contain any residues of synthetic chemicals, therefore it is double-fold beneficial for our health and the environment.The olive harvested at this stage is handled with special care from its collection to its bottling: it is ground within 24 hours of arrival at the factory to make surethat its properties remain intact and it undergoes a cold extraction. The obtained liquid is naturally separated from the pulp and vegetation water before being bottled or canned. This process is physically separated at all times from the conventional line of production to guarantee its properties. The product is certified by Sohiscert, a certification entity that ensures the oil meets strict organic standards.
