CARABUÑAS

“We, the Elder Ones” Carabunas is a family business, created in 2011 with the aim of developing a project that has been our dream for many years.   Specialised in the Elder Tree, our goal is to value all that the Elder has to offer. By using traditional methods we transform both the berry and the flower into artisan craft beer, licquor, jams and jellies.   Carabunas is unique in Spain, we are the only company focussing on the manufacture of products from the “Sabugueiro” Eldertree.   We have developed new products from this ancient and mystical tree and all it has to offer. We use traditional methods and recipes always retaining the quality but we add a drop of innovation to get the best results.   All of our products are prepared by growing and selecting the best crops, we adhere to strict organic standards.  We source all other raw materials locally here in Galicia.   Our products are grown and handmade in our workshop in “Vilar de Santos” Ourense, Galicia, North West Spain.  This area was declared a biosphere reserve by UNESCO in 2005.

All our products are handmade with great care, we never use any additives, preservatives or artificial colors. We take pride in using traditional methods and recipes. All our ingredients are sourced locally here in Galicia.  They are all produced organically. By adhering to strict principles of local and organic we can guarantee the best flavour with the added bonus of protecting the planet. Apples, oranges, lemons and cane sugar are all grown locally and organically. We use organic agar as a thickening agent, which is 100% vegan marine gelatine. Our liquor is handmade using the finest quality “Aguardiente” (Firewater) produced in a traditional “Still” *Aguardiente is a traditional fermented alcohol, similar to the Irish “Poiteen”
